Dear Mozzarella di Bufala Enthusiast:

Ramini Mozzarella LLC is a small cheese company that is located in Tomales, California. It is our first year of cheese production and we have overcome many challenges along the way to making healthy, local, fresh mozzarella cheese that is worthy of comparison to the wonderful mozzarella di bufala that is made in Italy. To date, we have successfully bred our water buffalo herd with the best of Italian genetics with the help and guidance of the respected local veterinarian Dr. Frank Mongini. We have had over twenty healthy calves born on the premises, we have taught the buffalo to be milked every day, and we have designed some very effective and comfortable milk stalls.

Soon we will have a year-round high quality supply of buffalo mik for making our fresh mozzarella. While we await the next lactation cycle in January, we will be in Italy working with mozzarella makers at casieficios in Caserta and Paestum. Visits, tours and tastings will resume on or about Feb 15th, 2013.
